In'Fusing' Korean BBQ - Cheap Korean BBQ In Town
August 03, 2017Seated in an easily overlooked corner along Dunlop Street, Korean Fusion BBQ is definitely not the easiest place to spot. Deceptively, the simply furnished entrance leads into a comfortable, ambient shophouse. Once we entered, the interior of the shophouse was cooling and well-ventilated - definitely the kind of environment you would want to start your meal off, especially for something like Korean BBQ.

Being the signature of the restaurant, the pork belly is the feature of the buffet spread, with it marinated in fifteen different styles using a variety of spices and condiments. As the name In'Fusing' suggests, the meat is marinated in styles from all different cuisines like: Korean, Thai, Chinese and so on. There was even bak kwa!
Apart from pork belly, the restaurant also offers chicken in numerous marinades. Other meats such as fish, beef, prawn and sotong are also offered. Alongside those, are other finger food like chicken sausages and crab sticks. In the vegetable section, the restaurant offers several leafy vegetables as well as mushrooms, such as shiitake and golden needle. We had a really good time letting the mushrooms simmer in the meat juices and enjoying them afterwards!
On the hot cooked food side, there’s fried rice and tteokbokki. Enough of that, on with the meal!

All the meat was cooked on a grill mat, which was much different from the typical BBQ restaurants using hot grill or a grill plate. The grill mat allows the juices of the meat to flow freely during the cooking process. Personally, I found the thin sliced beef to be amazing on the grill. It was a visual performance just to watch the meat juices oozing out of every slice of beef. With the grill mat, you will also eliminate the risk of the thin slices of meat from sticking to the grill and shredding. One slightly disappointing factor was that there were no eggs in the restaurant, or I would be enjoying my Fusion BBQ Sukiyaki-style.
My companion and I were divided on the best pork collar. I felt that the herbal pork belly was spectacular, reminiscent of well-aged spiced meat, with a peppery aftertaste that lingered at the back of my mouth. My companion, on the other hand, preferred the non-marinated pork belly, which goes to show that sometimes, the natural flavour of the pork belly is enough to stand out on its own.
On the other hand, however, I would advise against trying the sotong. While barbequed squid is indeed a delicacy, the sotong that the restaurant offers are either too tiny or milky to even leave any semblance of flavour in your mouth. Leave them too long on the grill, and they end up becoming crisps.
Also, the tteokbokki that we had on that day was slightly undercooked, and I would encourage customers to really be careful with it.
To accompany your meal, enjoy the free flow drinks that are available for you. Another plus point to dinning here! When you are done with your meal, don't forget about the desserts. Approach a staff to assist you with the waffle machine that is located near the hot cooked food area for some fluffy goodness.
Together with the waffle, you can get some ice cream at the back of the shophouse, which come in flavours such as Thai milk tea, double chocolate, coconut and lime sherbet. A few scoops of these babies on your waffles will have your tongue singing hallelujah.
The staff are generally ready to help whenever you ask for it, when you DO ask for it. Otherwise, they can appear to be passive at times, and usually leave you to your own devices. However, there is no denying that they are indeed good at what they do, regardless of whether it’s helping you make waffles or simply giving you that friendly smile.
