Firebake Review | Woodfired Bakehouse & Restaurant

March 05, 2018

Firebake rose to fame when straitstime magazine published an article on it. Being lovers of sourdough bread and the FoodNinja Team decide to give Firebake a try. The restaurant was gorgeous. Once inside, we can see that it was beautifully furnished. Smells of freshly baked bread wafted through the warm air. Once seated, we were ready to order our food!

We asked the waiter for recommendation as the menu selection doesn’t excite me. He suggest a few dishes and we went along with his suggestion. As we waited for the food to arrive, we were getting all sweaty and hot. Since the restaurant has an outdoor concept, the only way to cool myself down was under a slow spinning fan. It doesn’t help when the weather was screaming hot. So, my suggestion is to wear loose clothes when you come and dine at Firebake.

Firebake Bread Board - White Bread, Wholemeal Bread, Apricot & Raisin Bread, Rye Bread, Norwegian Butter & Greet Olive Oil (SGD 10 ++)

When the breadboard arrives on our table, we got excited. Turns out it was rather for naught as the bread was stale and hard. We guessed we were probably given an old batch of bread. However, the spread and olive oil were amazing. The butter was deep, rich and salty flavour while the olive oil has this pure, earthy taste to it. Both were amazing on the bread. It helps to keep the bread moist, making it easier to chew and savour the flavour.

Cured Norwegian Salmon, Rock Crust, Dill, Leek, Pickled Onion (SGD 26++)

We liked the contrast between the delicate smooth salmon verse the crispy crust and the crunchy leeks. The process of curing allows the salmon to retain its bright orange color while removing any fishy odor that might be presented in the fish. The salmon was seasoned lightly (maybe just salt and pepper) and none of the component on the dish were consider “heavy”. It’s a healthy tasting dish that many would enjoy. However, we feel that something was lacking. It didn’t excite us much and honestly we could say we were bored after the fifth bite. We don’t think is our cup of tea.

Bread & Butter Pudding (SGD 10++)

When the waiter suggest that we’ll have to wait 30 minutes for our dessert to be served, we were actually looking forward to it - considering it's wait time. It’s like an a la carte dish that can only be make upon the customer request. The dessert was presented in a deep cast iron pan. It was bubbling furiously for quite some time. We love the custard in the pudding. It has this deep vanilla custardy milky taste that we really liked. The bread? Not so much. It almost taste burn to me. Also, the raisin and apricot embroidered in the bread didn’t add much to the pudding too.

Overall, we would say that the food here was alright. It didn't meet my expectation though. We would love to revisit again, maybe in the morning or something, when we can know for sure that we would get freshly baked bread. That being said, it was not right for the waiter to serve us stale bread. We paid the same price as those morning customer.
